how do i figure how much load is being used on an industrial emergency generator?

1. You have to measure the output. An ammeter will tell you the current at the time you measure. Multiply by the voltage, and multiply by the square root of 3 if it is three phase. If the load varies, you need a recording meter. More detail would help.
2. If you have not assigned a definite load for the emergency generator, Install an ammeter, voltmeter and kwmeter in its control panel.
